It is what it is.
Sunny Day is the "good ending" from the Unlimited Blade Works route in the Fate/Stay Night VN. The ending we all saw in the anime series adaptation of said route was the "true ending," So technically, the "true ending" is the, well, true ending, obviously.
Once again, you get one last look at the characters you all love (as long as those characters are Shirou, Saber, or Rin) as they all live happily ever after just because they can. The animation and art are still amazing, the voice actor is still superb, the cinematography is still great. But, it adds practically nothing to the world, the story, anything really. This is a blu-ray extra. It doesn't have to exist, but they went and did it anyway, so who doesn't appreciate a little bit of effort.
Nothing exceptional here, just 7.5 minutes back in the UBW to experience another ending, which to most, does manage to leave an odd taste in their mouth considering it's too happy of an ending to be real. But remember, it was "good" not "true." Savor it people, this is like the last you'll see of these guys (because you all know everyone gets screwed over x10 in the Heaven's Feel route which cranks up the darkness and uncomfortable-ness well past something like Fate/Zero).
